Barb's Introduction to Japanese Pancakes

Our friend Barb Leenheer was in town and we wanted to take her to Fu Fu Cafe in Vancouver, BC to try Japanese Pancakes. We were pretty sure Barb had not yet tried them but we knew Barb would enjoy the experience so we picked her up (from her son's place) and took her to Fu Fu's. When we arrived, it was busy. Silly us, we didn't call ahead to book a table. Our bad. Next time we have to call ahead and reserve a table. It is a relatively small cafe and they have limited seating, especially for larger groups. There is a table against the window for solo or couples to sit, sip their expresso and have a snack. 


We waited for a bit so we used the time to show Barb the kitchen. They have a relatively large window to show the chefs working on the pancakes. 



We were fascinated to see the chefs scoop the batter on grills. Unlike the western type pancakes, the batter is a lot more thinner and cannot be scooped. The recipe they used here is like a meringue. It's whipped up to contain peaks.


When you look at the pancakes on the grill, they resemble souffles. After scooping the batter on the grills, they cover it and let them cook. Then when they flip them, they will spray some water on the grill so that they steam the pancakes for awhile.

At last, our order was served. Below is a picture of my tiramisu pancakes. You can see the generous serving of coffee cocoa powder on my stack of pancakes and if the pancakes and whipping cream wasn't enough, they include a scoop of ice cream to make it even more decadent.
